Chicken Udon Pad Thai

Ingredients

  • 200 grams chicken breast, thinly sliced
  • 4 tablespoons soy sauce
  • freshly ground pepper to taste
  • 1 tablespoon sesame oil
  • 100 grams broccoli, cut in small-sized chunks
  • 3 small bell pepper (1 yellow, 1 red, 1 green) sliced in 1/4 inch strips
  • 100 grams white mushrooms
  • 2 tablespoons butter or ghee
  • 2 garlic cloves, crushed
  • 400 grams pre-cooked udon noodles (Alternatively, you can use 500 grams frozen udon noodles)
  • 2 eggs, lightly whisked

  • Step 1: While a pot of water boils, Mix chicken with sesame oil, soy sauce and pepper and set aside to marinate

  • Step 2: Leave noodles in boiling water for about 2 minutes, drain the water and set aside

  • Step 3: Heat butter or ghee

  • Step 4: Add the chicken and stir-fry for 2 minutes or until fully cooked

  • Step 5: Add in crushed garlic, broccoli, mushrooms and bell pepper strips. Stir-fry for another 2 minutes

  • Step 6: Move everything to one side of the pot and pour in the eggs. Quickly stir-fry so they take shape

  • Step 7: Mix the eggs with the remainder of the sit-fry
  •     Step 8:  Add in the noodles and serve
