Ingredients
- •200 grams chicken breast, thinly sliced
- •4 tablespoons soy sauce
- •freshly ground pepper to taste
- •1 tablespoon sesame oil
- •100 grams broccoli, cut in small-sized chunks
- •3 small bell pepper (1 yellow, 1 red, 1 green) sliced in 1/4 inch strips
- •100 grams white mushrooms
- •2 tablespoons butter or ghee
- •2 garlic cloves, crushed
- •400 grams pre-cooked udon noodles (Alternatively, you can use 500 grams frozen udon noodles)
- •2 eggs, lightly whisked
Directions
Step 1: While a pot of water boils, Mix chicken with sesame oil, soy sauce and pepper and set aside to marinate
Step 2: Leave noodles in boiling water for about 2 minutes, drain the water and set aside
Step 3: Heat butter or ghee
Step 4: Add the chicken and stir-fry for 2 minutes or until fully cooked
Step 5: Add in crushed garlic, broccoli, mushrooms and bell pepper strips. Stir-fry for another 2 minutes
Step 6: Move everything to one side of the pot and pour in the eggs. Quickly stir-fry so they take shape
Step 7: Mix the eggs with the remainder of the sit-fry- Step 8: Add in the noodles and serve
